Finally.....my first post from my brand new home! :) It has been a long four months but I'm finally settled into my new apartment with a decently-big kitchen. Most people would say it's quite big....but I'd definitely love a bigger one.......maybe later! But for now.....I'm super-happy......especially after my tiny kitchenette in Paris. And here's one of my first meals from my new kitchen.....Bok Choy n Tofu stir fry with toasted sesame seeds.
I must confess that I've never been good at Chinese. I tried it thrice in the past and the results were really not worth talking about. But I love Chinese food...especially all things with tofu! So I knew I had to somehow learn how to make it well. And after 1 year of eating a LOT of authentic Chinese at Tien Hiang (an all-vegetarian, super-tiny, and super-yummy Chinese resto in Paris), I was missing it quite bad. So, skeptical as I was, I geared up and gave it a try. Well...all that Chinese I ate really paid off...it was delicious!!!
For 4 servings:
6 medium-sized bok choy
1 small red pepper, sliced lengthwise
200 gms firm tofu, drained
2 cloves garlic, peeled and minced
1 tbsp ginger, peeled and minced
2 tbsps olive oil
1 tbsp cornflour, dissolved in 1/4 cup water
1 1/2 tbsp vinegar
1 tbsp soy sauce
1 tsp brown sugar
1 tbsp whole-grain mustard
2 tsps toasted sesame seeds
salt
Start by gently pressing down the tofu with a kicten-towel so as to remove excess water. Then cut it into 1/2 inch thick rectangles or sqaures. On a Trim the ends of the bok choy and separate the stalks.
In a big non-stick pan, heat the olive oil. Then fry the ginger and garlic for 2 minutes. Add the red peppers. Follow with the bok choy after 2 minutes and stir-fry until wilted. Add the vinegar, soy sauce, mustard, sugar, and salt. After 2-3 minutes, add the cornflour mixture and cook for 2 minutes until the sauce thickens. Finally add the tofu and stir-fry gently for another 2 minutes. Served garnished with toasted sesame seeds, along with steamed or boiled rice.
