Need I say more?
These cookies are simply divine! With a delicious orange-chocolate flavor, they're chewy and crunchy at the same time. Perfect Christmas gift for Rishab :)
To make about 20 large or 30 small cookies:
1 cup butter, soft
2/3 cup brown sugar
2/3 cup white sugar
2 cups flour
2 cups quick cooking oats
3 tsp cocoa powder
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp orange zest
2 tbsp vinegar
2 tbsp (30 ml) Cointreau
1 tbsp vanilla
1/2 cup chopped hazelnuts (can be substituted with walnuts)
Preheat oven to 180 C (350 F).
Start by lightly beating the sugars and butter together in a big bowl, such that the sugar granules don't dissolve completely. Add the vinegar, cointreau and vanilla, and mix well. (If you don't have cointreau, you can substitute it with 2 tbsp water). In a separate bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
Combine both the mixtures in a bowl. Add the oats, hazelnuts and orange zest. Mix well.
Roll the dough into balls (sizing them depending on whether you want large cookies or small ones). Keep in mind that the dough becomes almost double in size after baking. Place the dough balls on greased baking trays, with enough space between them, and bake for 15 mins. (Use the upper rack of the oven to bake. If using the lower rack, make sure to shift the tray to the upper rack after 5 minutes or so).
Let cool for 10 minutes before biting in!
