Pizza-style pita


Sometimes all you need to do is open your fridge and stare at the ingredients inside...and it's amazing what kind of inspiration you can get! As I peered inside mine today....I saw some leftover hummus, tomatoes, a carrot, an aubergine, some snow peas, mint leaves, lemon, and some other condiments.


I had pita bread left as well...but just wasn't in a mood to simply have it with hummus again. So letting my instincts guide me, I picked up the veggies that I thought would go well with hummus and pita. Started by cutting up strips of carrot and aubergine, and roasting them with olive oil, garlic and pepper. Then split the pita into 2 and toasted them. Chopped the mint leaves and sauteed a chopped onion in the meanwhile. 


Then on to the putting-it-together part. Spread 1 tbsp of hummus on each pita, followed by the carrots, aubergine and onions. Sprinkled grated emmental on top and grilled for 3 mins again to let the cheese melt. Finally garnished with chopped mint leaves....and there you have it - a yummy and delightfully different way of having pita bread and hummus!


We had it as main course but you can always cut it up and serve as a snack.
