The french are true bean-lovers! Passing by the fresh beans section in the supermarket today, i saw such an array of beans as i had never seen before! Growing up, beans were on my list of most-hated vegetables...but today, seeing the colorful display, i couldn't resist buying several varieties. I just had to try them!
Left to right - Cranberry beans, green beans, yellow beans, and Romano beans (flat italian beans).
Even though i was tempted to use all the types today, i controlled my urge to go on a bean-overload and used just two to make a fresh and colorful yellow and green bean salad!
Making this is simple. Trim the edges of the yellow and green beans, wash, and then boil them for 4-5 mins until they are slightly tender (you need to make sure they dont become limp). They could also be used raw if that'a how you like them. Drain the beans and once they are cool, toss them in a big bowl with a handful of cherry tomatoes (halved), and a few sticks of cucumber. I also added a few sticks of apple and a peice of sundried tomato (chopped). Serve with a balsamic vinaigrette dressing :)
Vinaigrette:
1/4 cup balsamic vinegar
3/4 cup olive oil
1 clove garlic, peeled and crushed
1 tsp mustard
1/2 tsp salt
1/2 tsp pepper
Whisk all ingredients together and keep aside for 30 mins for all the flavours to soak in.
