I was staring at some leftover hummus in my fridge yesterday and asking myself what could i do with it that would be innovative and tasty?! Luckily i was in a mood to experiment...and the result was a delicious fusion of mediterranean and italian flavours! Try this the next time you feel like having your hummus differently.
All you need to do is this...
Heat a spoon of olive oil and sautee 2 cups of frozen spinach(defrosted and drained). Add 2 tbsps of crumbled feta cheese. When the water dries up, turn off the flame, add 1 cup of hummus and mix well. Throw in a spoon of chopped sundried tomatoes for that tangy flavour(this is optional, you could do without it). Add salt and pepper as per your taste. Spread the mixture on your favorite kind of toasted bread, top with a bit of grated mozzarella and grill for 2 mins or until the cheese melts. Serve hot and crisp!

Mm..I love that flavor combination. Us peasants in the US do the same thing with pizza- bruschetta is a great idea!
