Ever since i moved to France i became an aubergine fan! Two reasons why i never liked it before......a) i don't relish the taste when it's made in an indian curry style, and b) the indian aubergines often turn out to have worms in them, which obviously puts me off!!! One of my favorites - Grilled aubergine slices, marinated in olive oil and garlic. But a simple way to make them even more delicious is to roll them with some feta cheese inside. Here's my aubergine and feta rolls recipe:
2 medium aubergines
100 gms feta cheese
1 tbsp finely choppped parsley
1/2 tsp garlic powder
olive oil
salt and pepper
Start by slicing the aubergines length-wise. Make sure the slices are not too thin nor too thick.
Heat a spoon of olive oil in a large non-stick pan, and place the slices on it. Drizzle some more oil if needed. Cook both sides until the aubergines become soft and golden-brown.
Spread a sheet of paper-towel on a board and arrange the slices on it to soak the excess oil.
Sprinkle with some salt, pepper, garlic and parsley. Put a small piece of feta on one side of each slice.
Fold into rolls, starting at the corners.
Garnish with a twig of mint and serve.
The same could be done with zucchini slices as well. Feta goes well with both, but cream cheese and camembert taste equally good!
