Nothing beats the feeling of having something frozen in this heat. And what better than frozen fruit yogurt as a healthy and tasty dessert! I love blueberries. Unfortunately you don't get fresh blueberries in India, but luckily you do get the next best thing.....canned blueberries. I recently brought a can thinking I'd make a blueberry cheesecake. But when I couldn't find a good vegetarian recipe for it, I decided to whip up some frozen blueberry yogurt. In the end, I was really glad to have made a healthier dessert....because it was so yummy that I have been eating it straight from the box! And it's so easy to make, you'll want to make double or even triple the amount.
If you are lucky enough to own an ice-cream maker, your job will be much simpler and I'm sure you'll get a better texture. But if you don't, no fret! I made mine without it, and I have no complaints. It was delicious and smooth and creamy.
P.S: No ice-cream scooper here....hence the deformed scoop! (Have already written it down on my shopping list)
For about 8 scoops:
800 gms yogurt
1/2 cup powdered sugar
1 cup canned blueberries
Tie the yogurt in a cheesecloth and place in a strainer for about 2-3 hours, so as to drain all the whey from it. You should have about 500 gms of thick creamy yogurt by the end of it.
In a big bowl, whisk the yogurt and the sugar. Then add the blueberries along with their syrup, and whisk a little more to form a smooth creamy mixture.
Transfer to a wide box and freeze. When it's almost frozen, take a fork and crush the yogurt for a few minutes, so as to kind of churn it once. Return to freezer.

This looks so rich and delicious! Summer really is all about frozen yogurt!! I'm planning on making some sorbet this weekend. Since I have some fresh watermelon, I might try Summertime Delight Watermelon Sorbet. Or if I'm in the mood for blueberries, maybe I'll try that! Thanks for sharing!
