Orange chocolate cake

Got a demand from the husband for a chocolate-orange cake. Scoured the internet for a while, but when I couldn't find any good eggless orange-chocolate cake recipe.....I turned to the first cake recipe I ever used......a basic sponge cake. I think having a good basic sponge cake recipe is essential to making many delicious cakes. A bit of substitution here and there, keeping the ratio of the dry ingredients to the wet ones the same, and you can play around with different flavours. So I used 100 ml water + 100 ml orange juice for 200 ml water, reduced 2 tbsps flour, added 2 tsps of cocoa powder to half the batter, and threw in some orange zest and chocolate chips. And there you have it.....a moist and delicious orange-chocolate cake!

1 can (400 gms) condensed milk
120 gms soft butter
2 tbsps sugar
2 tsp vanilla essence
2 tbsps orange zest
100 ml water
100 ml orange juice
250 gms flour minus 2 tsbps flour
2 tsp baking powder
1tsp baking soda
2 tsps cocoa powder
2 tbsps chocolate chips

Preheat the oven to 200 C/400 F.

In a large bowl, whisk together the butter and sugar. Add the condensed milk and vanilla essence. Beat well. Continue beating while adding water slowly, followed by orange juice.

In a separate bowl, mix together the flour, baking soda, and baking powder.

Add half the flour mixture to the wet mixture and beat well. Follow by mixing in the remaining flour mixture. Beat well for a few minutes.

Divide the batter into two bowls. Add the orange zest to one part and the cocoa powder to the other. Mix both the batters well so that there are no lumps. Pour the 2 batters bit by bit into a greased bundt pan, alternating between the two. Top with the chocolate chips.

Bake at 180C for 30-35 mins, until a toothpick inserted in the center comes out clean.
