Fresh tomato salsa in a jiffy

What's your favorite snack to make in a jiffy? One of my favorites is Salsa. That is....if I have a pack of tortilla chips handy! Especially on hot days as it needs no cooking. It takes hardly 10 minutes to make and you can rarely go wrong with it! And it's one of those simple recipes that don't require anything fancy......you're more likely than not to have all the ingredients at hand. And this salsa is just so delish....it beats any store-bought jar hands down!


For 4-6 servings:

5 tomatoes
1/2 cup chopped coriander/cilantro
1 onion
2 cloves garlic
2 tbsp chopped jalapenos
1 green chilli, chopped
1 tbsp olive oil
juice of 1 lemon
1 tsp salt

Rough chop the tomatoes, onions, and garlic. Put all the ingredients into a food processor or blender, and and turn on at the lowest speed for 10-15 seconds. Check the consistency. If needed, repeat one more time. Be careful not to puree it. You want the salsa to be a little chunky.

Keep in the refrigerator for 15-20 minutes if you have the time. It helps the flavors mix. Serve with crisp tortilla chips, or use to make your favorite mexican dish!
