Green Tortillas

Green is for Spring....and for St. Patrick's Day! Rishab especially requested me to make something green for the day (don't ask me why!) and I really don't like to use food coloring.....so I decided to use spinach to make green tortillas. This was my first time making tortillas from scratch. I have been using the store-bought ones forever. I am so glad I made these at home....don't think I will ever again buy packaged tortillas. They are  so awfully easy to make! Found a simple recipe here and adapted it to make half-flour, half-corn flour tortillas with spinach. Fajitas for dinner tomorrow!


To make 6 big tortillas:

1/2 cup corn flour (makki ka atta in Hindi)
1/2 cup all-purpose flour
1/2 tsp salt
1/4 tsp baking soda
3/4 cup spinach puree (boiled spinach leaves pureed in a blender)


Mix the corn flour, AP flour, salt and baking soda together. Knead into a dough by slowly adding the spinach puree. Add more water if needed. The dough should be soft but not sticky. Cover the dough with cling wrap and set aside for 20-30 minutes. 

Divide the dough into 6 balls and roll each ball into a thin round tortilla using some flour. (Use a tortilla press if you have one. I didn't, so I rolled them by hand. It wasn't tough at all). 
Put a griddle on high heat. Gently place a tortilla on the hot griddle, and cook for 40-50 seconds on each side. You should see little bubbles forming, and it should get lightly toasted. Be sure to not over-cook the tortilla or it could get too crisp. Repeat for each tortilla and wrap them in some aluminium foil. 

Use the same day or refrigerate and reheat later for your favourite Mexican dish.
