Super-healthy and yummy cabbage-yogurt sandwich

Mothers try the most amazing things to make their children eat healthy. Mine used to make these awesome n creamy cabbage sandwiches when I was small, and I never knew until a long long time that she made them with yogurt (I probably would have hated them if I knew that)! I used to love them as a kid...and when yesterday I saw a purple cabbage staring at me from my refrigerator, I thought it would make a beautiful cabbage and yogurt sandwich. What I love most about this sandwich is the unique taste...so different from anything else. It's tasty...and it's super-healthy! And...it's so easy....anyone can make it! I used a purple cabbage, but of course you can use a regular one as well. 


For 8 sandwiches:

8 slices bread of your choice
1/2 head cabbage, finely shredded
250 gms hung curd
1 tbsp black mustard seeds
1 tbsp olive oil
salt

Heat the olive oil in a large non-stick pan. Add the mustard seeds when the oil is hot. Then add the cabbage and sautee for 5-7 mins until the cabbage wilts. Add salt. Let cool for 10-15 mins. 

In a bowl, mix together the hung curd and cabbage. Spread about 2 tablespoons of the mixture on each of the 4 slices of bread. Cover with the other 4 slices and grill the sandwiches until nice and brown. Cut each sandwich diagonally into two. Serve hot.
P.S. - These sandwiches are not suitable for packing....will become a soggy mess!

  4. Samovarious....it's yogurt hung in a muslin cloth for about 2 hours to let all the water drain out....so u're left with thick creamy yogurt.

    greek yogurt, being thick, would work as well.

  11. One can truly appreciate a sandwich if it is done in a clean and healthy manner. Because of our busy lifestyles, we usually take our food to go and it is often in the form of sandwiches so that we can hold them while we are on the move. People patronize a bagel shop or diner where they have tasted the best sandwiches in town while others try to make it more personal as they make their own kind of sandwich which is very thoughtful.
