I have heard of wild asparagus, wild strawberries, wild ginger, wild lettuce...but i never imagined 'wild' to be an adjective i would see next to rice! Intriguing...just like black garlic. The name is misleading, however, as it's not really part of the rice family, but a grass! Surprise! In use, it is like regular rice...but takes more water and almost triple the time to cook, has a chewy texture and a nutty taste. It grows primarily in North America, in isolated lakes and rivers. It's not a cheap buy (due to an extremely difficult harvesting process), and thus very often mixed with brown and/or white rice in recipes. Definitely a very interesting way to add some color to any rice dish as well as an element of surprise. Oh...and an incredible fact...wild rice keeps indefinitely in a cool dry place!
